How can those cartons of chocolate milk last so long out of the refrigerator?

Like we buy those little cartons of chocolate milk from Costco all the time and I just noticed that we keep them in the pantry for a long time before putting them in the fridge! They aren't even in the freezer isle when you buy them so how the heck do they stay out without spoiling???
